Energy Protein Balls
No-bake energy bites packed with oats, peanut butter, and chocolate chips. The perfect grab-and-go after-school snack that tastes like cookie dough but fuels you through homework and practice.
Ingredients
- 1 cup old-fashioned rolled oats
- ½ cup peanut butter
- ¼ cup honey
- ¼ cup mini chocolate chips
- 2 tbsp ground flaxseed
- 2 tbsp hemp seeds
- 1 tsp vanilla extract
- ¼ tsp cinnamon
Method
- Combine rolled oats, ground flaxseed, hemp seeds, and cinnamon in a large mixing bowl.
- Add peanut butter, honey, and vanilla extract. Stir until the mixture is evenly combined and holds together.
- Fold in the mini chocolate chips until evenly distributed throughout the mixture.
- Refrigerate the mixture for 15 minutes if it is too sticky to handle.
- Roll the mixture into 1-inch balls using slightly damp hands to prevent sticking. You should get about 18 balls.
- Place on a parchment-lined tray and refrigerate for at least 30 minutes to set.
- Store in an airtight container in the refrigerator for up to one week, or freeze for up to 3 months.
Chef's note: Swap peanut butter for almond butter or sunflower seed butter for different flavors or nut-free needs. Add a scoop of protein powder for extra protein. These are perfect for pre-game fuel or post-workout recovery. Keep them in the fridge so the chocolate chips stay firm.
