Chicken Biryani
A magnificent Indian rice dish where fragrant basmati rice layered with spiced, yogurt-marinated chicken is slow-cooked together until every grain is infused with saffron, cardamom, and deep, complex flavors.
Ingredients
- 2 cups basmati rice, soaked for 30 minutes
- 6 cups water for parboiling rice
- 2 bay leaves
- 4 green cardamom pods
- 4 whole cloves
- 1 cinnamon stick
- 1 tsp salt
- 1.5 lbs bone-in chicken pieces (thighs and drumsticks)
- ½ cup plain yogurt
- 1 tbsp ginger-garlic paste
- 1 tsp red chili powder
- 1 tsp turmeric
- 1 tsp garam masala
- 1 tsp salt
- 3 tbsp ghee or vegetable oil
- 2 large onions, thinly sliced
- ¼ tsp saffron threads, soaked in 3 tbsp warm milk
- 2 tbsp fresh mint leaves, chopped
- 2 tbsp fresh cilantro, chopped
- 1 tbsp ghee, cut into small pieces
Method
- Marinate the chicken with yogurt, ginger-garlic paste, chili powder, turmeric, garam masala, and salt. Set aside for at least 30 minutes (or overnight for best results).
- Parboil the rice: bring 6 cups of water to a boil with bay leaves, cardamom, cloves, cinnamon, and salt. Add the soaked and drained rice. Cook for exactly 5 minutes until the rice is 70% done (firm in the center). Drain and set aside.
- Heat ghee in a large heavy-bottomed pot over medium heat. Fry the sliced onions for 12-15 minutes, stirring often, until deep golden brown and caramelized. Remove half for garnish.
- Add the marinated chicken to the pot with the remaining fried onions. Cook over medium-high heat for 8-10 minutes, turning occasionally, until the chicken is seared and the marinade has thickened.
- Spread the parboiled rice evenly over the chicken layer. Drizzle the saffron milk over the rice in lines. Scatter mint and cilantro on top, and dot with small pieces of ghee.
- Cover the pot tightly with aluminum foil, then place the lid on top to create a seal (dum). Cook over the lowest possible heat for 25 minutes. Do not open the lid during cooking.
- Remove from heat and let rest, still covered, for 5 minutes. Gently fluff with a fork, mixing the layers from bottom to top. Garnish with the reserved fried onions. Serve with raita.
Chef's note: The dum (sealed slow cooking) is what makes biryani special -- the chicken and rice steam together, exchanging flavors. Sealing with foil under the lid is crucial. Bone-in chicken gives more flavor but boneless thighs work too. Serve with raita (yogurt with cucumber and cumin) and a simple salad of sliced onions with lemon juice.
