Turkey and Black Bean Bowl
A lean protein powerhouse bowl with seasoned ground turkey, black beans, brown rice, and fresh toppings. Simple to prepare and ideal for meal prepping an entire week of lunches.
Ingredients
- 1.25 lbs lean ground turkey
- 1 can (15 oz) black beans, drained and rinsed
- 2 cups brown rice, cooked
- 1 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp cumin
- ½ tsp garlic powder
- ½ tsp salt
- 1 cup corn kernels
- 1 avocado, diced
- ½ cup salsa
- ¼ cup fresh cilantro, chopped
- 1 lime, cut into wedges
Method
- Cook brown rice according to package directions if not already prepared. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spatula, until browned and no longer pink.
- Stir in chili powder, cumin, garlic powder, and salt. Cook for 1 minute until fragrant.
- Add drained black beans and corn kernels to the skillet. Stir to combine and cook until heated through.
- Divide cooked brown rice among four bowls. Top with the turkey and black bean mixture.
- Add diced avocado, salsa, and fresh cilantro on top. Squeeze lime over each bowl before serving.
Chef's note: For meal prep, store the turkey-bean mixture and rice in separate containers. Add fresh toppings when ready to eat. The turkey-bean mixture keeps well in the fridge for 5 days. Use 99% lean turkey for the lowest fat content.
