Lemon Herb Grilled Fish
Delicate white fish fillets marinated in a bright blend of lemon, garlic, and fresh Mediterranean herbs, then grilled to flaky perfection. A light, healthy, and elegant dish that comes together in under 30 minutes.
Ingredients
- 4 white fish fillets (branzino, sea bass, or snapper), about 6 oz each
- 3 tbsp extra virgin olive oil
- 3 tbsp fresh lemon juice
- 1 tsp lemon zest
- 3 cloves garlic, minced
- 2 tbsp fresh oregano, chopped (or 2 tsp dried)
- 1 tbsp fresh thyme leaves
- 1 tbsp fresh parsley, chopped
- ¾ tsp salt
- ½ tsp black pepper
- 1 lemon, sliced into rounds
- 2 tbsp fresh dill, for garnish
- 1 tbsp capers (optional)
Method
- In a shallow dish, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, parsley, salt, and pepper.
- Place the fish fillets in the marinade, turning to coat both sides. Let marinate for 15 minutes at room temperature. Do not over-marinate as the acid will begin to "cook" the fish.
- Preheat your grill or grill pan to medium-high heat. Oil the grates well to prevent sticking.
- Place lemon slices on the grill first, then lay fish fillets on top of the lemon slices (this prevents sticking and adds flavor). Grill for 4-5 minutes per side, depending on thickness, until the fish flakes easily with a fork.
- Carefully flip the fish and grill for another 4-5 minutes until cooked through and opaque in the center.
- Transfer to a serving platter with the grilled lemon slices. Garnish with fresh dill and capers if using. Serve with a green salad and crusty bread.
Chef's note: If using thin fillets, reduce cooking time to 2-3 minutes per side. A fish grilling basket makes flipping much easier and prevents the fish from breaking apart. This also works beautifully in a 425F oven on a sheet pan if grilling is not an option.
