Hidden Veg Pasta Sauce
A silky tomato sauce with five vegetables blitzed invisibly smooth — the batch-cooking hero for toddlers who claim to hate anything green. Stir through pasta, spread on pizza bases or spoon over fish fingers. Freezes brilliantly in toddler-sized portions.
Ingredients
- 1 tbsp olive oil
- 1 medium onion, chopped
- 1 medium carrot, grated
- 1 small courgette, grated
- 1 small red pepper, chopped
- 2 cloves garlic, crushed
- 2 tins (400 g) chopped tomatoes
- 1 tsp dried oregano
- 100 ml water
Method
- Warm the oil in a large pan and soften the onion, carrot, courgette and pepper over a medium-low heat without browning.
- Stir in the garlic and oregano and cook for another minute.
- Add the chopped tomatoes and water, then simmer gently until the vegetables are completely soft and the sauce has thickened.
- Blend until completely smooth — no tell-tale lumps.
- Stir through cooked pasta, cool the rest and freeze flat in small bags or an ice cube tray for instant toddler dinners.
Chef's note: No added salt or sugar — the veg makes it naturally sweet. Adults can season their own portion at the table. Keeps 3 days in the fridge or 3 months in the freezer. Suitable from weaning onwards too — it is smooth enough for babies from 6 months.
