Greek Yogurt Chicken
Chicken thighs marinated in a tangy Greek yogurt and herb mixture, then baked until golden and incredibly juicy. The yogurt tenderizes the meat while creating a flavorful crust.
Ingredients
- 8 bone-in chicken thighs
- 1 cup plain Greek yogurt
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1 tsp smoked paprika
- ½ tsp cumin
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp fresh dill, chopped
Method
- In a large bowl, combine Greek yogurt, minced garlic, olive oil, lemon juice, oregano, smoked paprika, cumin, salt, and pepper. Mix well.
- Add chicken thighs and coat thoroughly with the yogurt marinade. Cover and refrigerate for at least 1 hour, or ideally overnight.
- Preheat oven to 425 degrees F. Remove chicken from the refrigerator 20 minutes before baking to take the chill off.
- Place chicken thighs skin-side up on a parchment-lined baking sheet. Scrape off excess marinade but leave a thin coating.
- Bake until the skin is golden brown and crispy and the internal temperature reaches 175 degrees F.
- Let rest for 5 minutes before serving. Garnish with fresh dill.
Chef's note: The longer the chicken marinates, the more tender and flavorful it will be. Overnight is ideal. The acidity in the yogurt breaks down proteins for incredibly juicy meat. Serve with rice pilaf, roasted potatoes, or a Greek salad.
