Cheesy Bean Quesadilla Triangles
Toasted tortilla triangles filled with mashed beans, melted cheese and mild veg — brilliant finger food for toddlers from 12 months, and a 10-minute lunch the whole family can share. No added salt, no chilli, all the melty appeal.
Ingredients
- 4 small soft flour tortillas
- 200 g tinned black beans or kidney beans (no added salt), drained
- 80 g mild cheddar, grated
- ½ small red pepper, very finely diced
- ½ tsp mild smoked paprika
- 1 tsp olive oil
Method
- Mash the drained beans roughly with the paprika — a few whole beans are fine for toddlers over 12 months, but mash well for younger ones.
- Spread the bean mash over two tortillas, scatter with cheese and diced pepper, and top with the remaining tortillas.
- Brush a frying pan with the oil and toast each quesadilla over a medium heat until golden and the cheese has melted, pressing gently with a spatula.
- Cool for a couple of minutes — melted cheese holds heat — then cut into small triangles and check the temperature before handing over.
Chef's note: Choose tinned beans with no added salt and, if you can, lower-salt tortillas — wraps are one of the saltiest items in a toddler diet, so keep portions sensible. If serving cherry tomatoes or grapes alongside, always quarter them lengthways.
