Acai Bowl
A thick, frosty blend of acai berry puree and banana, topped with crunchy granola, sliced tropical fruits, coconut, and a drizzle of honey. This vibrant Brazilian superfood bowl is a refreshing, energizing start to the day.
Ingredients
- 2 packets (3.5 oz each) frozen acai puree (unsweetened)
- 1 ripe banana (frozen)
- ½ cup frozen mixed berries
- ½ cup almond milk or coconut water
- ½ cup granola
- 1 banana, sliced
- ¼ cup sliced strawberries
- ¼ cup fresh blueberries
- 2 tbsp unsweetened shredded coconut
- 2 tbsp honey or agave nectar
- 1 tbsp chia seeds
Method
- Run the frozen acai packets under warm water for 10 seconds, then break them into pieces into a high-speed blender.
- Add the frozen banana, frozen berries, and almond milk to the blender. Blend on low speed, using the tamper to push ingredients down, until very thick and smooth. The consistency should be much thicker than a smoothie.
- Divide the acai mixture between two bowls, spreading it evenly.
- Arrange the toppings in rows: granola, sliced banana, strawberries, blueberries, and shredded coconut. Drizzle with honey and sprinkle chia seeds on top.
- Serve immediately before the base melts. Eat with a spoon.
Chef's note: The key to a thick bowl is using minimal liquid and all frozen fruit. If the blender struggles, add liquid just one tablespoon at a time. Use unsweetened acai packets to control the sugar content. In Brazil, acai bowls (acai na tigela) are often served with guarana syrup instead of honey.
